The hearty flesh, distinct flavor, and wide array of nutrients packed into pumpkins makes them an idea ingredient to add to a variety of savory meals as well.

These ravioli give you all of the fiber, vitamins, and other nutrients of pumpkins along with a rich, savory butter sauce that will instantly bring to the favorite flavors of the cooler seasons.
What You Will Need
• 4 large eggs
• 1 tablespoon of water
• 3 1/2 cups of all purpose flour
• 1 1/2 teaspoon of salt
• 2 cups of ricotta cheese
• 1 medium egg
• Fresh grated nutmeg
• 4 tablespoons of unsalted butter
• 10 sage leaves
• A fork
• Plastic wrap
• A mixing bowl
• A large pot
• 1 rolling pin
• Ravioli stamp
• Large saute pan
What to Do
• Pour the flour out on a clean work surface
• Make a large wide well in the center
• Add the eggs, water and salt into the well and beat together with the fork, making sure not to break the edges of the well
• As you mix the egg mixture, slowly incorporate the flour until the mixture begins to come together and become a loose dough
• Bring the rest of the dough together with your hands
• Knead and work the dough until all of the flour is fully incorporated and the dough is easy to work with and smooth
• Wrap the dough in plastic wrap and rest at room temperature for 20 minutes
• Combine ricotta, pumpkin puree, egg, salt and nutmeg into a mixing bowl and set aside
• Use a rolling pin to roll out the pasta dough into wide sheets
• Place tablespoons of the filling on the dough and top with the other sheet of pasta dough
• Seal the edges around the filling and cut it with the ravioli stamp
• Refrigerate ravioli until you are ready to cook it
• Add water to the large pot and bring to a boil with a generous helping of salt
• Add the ravioli to the water in small batches
• Cook each ravioli for 7 minutes, then drain and set aside
• Pit the large saute pan over medium heat
• Brown the butter in the large saute pan
• Add sage and cook for an extra few minutes
• Transfer the ravioli to the pan and toss in the sauce
• Remove the ravioli from the pan and serve immediately, garnishing with a couple of leaves
